ROAST CHICKEN WITH ROSEMARY, LEMON, AND GARLIC

Ingredients

  • 1 whole chicken, about 1.25 kg
  • 4 to 5 sprigs of rosemary
  • 1 lemon
  • 1 bulb of garlic
  • 3 tbsp olive oil
  • Freshly ground black pepper
  • Salt
  • 250 ml chicken broth

Instructions

  1. Coat the chicken with olive oil and season the inside and outside with salt and pepper.
  2. Tie the legs together with some kitchen string. Place a sprig of rosemary inside the cavity.
  3. Place the chicken in an oven dish with halved garlic, lemon, and rosemary. Drizzle with more olive oil.
  4. Insert the thermometer into the thickest part of the chicken breast to ensure the correct internal temperature.
  5. Place the dish in the oven, connect the thermometer, and set it to an internal temperature of 85°C.
  6. Select the steam cooking option, choose "low steam," and set the oven to 200°C.
  7. After about 20 minutes, baste the chicken with its juices, repeating regularly.
  8. Your oven will notify you when the chicken is ready – the skin should be crispy, and the meat juicy.
  9. Remove the chicken from the oven and cut it into pieces. Drain the fat from the pan, place it on the stove, crush the garlic, squeeze in the lemon, sauté, and deglaze with the broth.
  10. Season with salt and pepper, strain the sauce, and pour over the chicken. Reheat the chicken in the oven for 5 minutes with the sauce.
  11. Serve with fries or croquettes, applesauce, salad, and mayonnaise.
