Fruity summer salad with melon, Parma ham and feta

Ingredients

  • 1 Charentais melon; about 600 g
  • 400 g watermelon
  • 2 tbsp cress
  • 1 handful of mint
  • 1-2 stalks of basil
  • 4 baby cucumbers
  • 2 avocados
  • 4 tbsp pistachio kernels
  • 100 g Parma ham, in very thin slices
  • 180 g feta cheese
  • Dressing:
  • 2 tbsp lemon juice
  • 2 tbsp apple cider vinegar
  • salt
  • Pepper, black; from the mill
  • 0.5 tsp mustard
  • 1 tsp honey
  • 2 tbsp olive oil

Instructions

  1. Cut the melon into quarters, scoop out the seeds, remove the skin and cut the flesh into wedges. Remove the watermelon flesh from the skin, remove the seeds if necessary and dice the flesh.
  2. Wash and spin dry the cress, mint and basil, pluck the leaves from the coarse stems and chop roughly or leave whole, as desired.
  3. Wash the cucumber and cut lengthways into sticks. Halve the avocados, remove the stone and cut the flesh into thin slices. Roughly chop the pistachio kernels.
  4. Mix the lemon juice, vinegar, salt, pepper, mustard, honey and oil to make a dressing.
  5. Arrange the melon wedges with the melon cubes and avocado slices on plates. Drape the ham on top and arrange the cucumber.
  6. Drizzle everything with the dressing and sprinkle with the herbs, cress and pistachios. Break the cheese into pieces and sprinkle on top.
  7. Season with pepper and serve.
