Michelin Star restaurant La Distillerie will move from Bourlingster to Findel and take on a new name: Restaurant Fields by René Mathieu.
Resma SA, operator of the Château de Bourglinster Restaurants, is unveiling major changes for the year 2025, in collaboration with Executive Chef René Mathieu.
Exceptional setting at Findel
In January 2025, the Michelin-starred Restaurant ‘La Distillerie’ will move to the Airfield Hotel in Findel and take on a new name: Restaurant FIELDS by René Mathieu.
According to the press release, this relocation marks an important step for René Mathieu and his team, who will be setting up in this exceptional setting close to the airport. The Restaurant FIELDS will offer a unique gastronomic experience, featuring excellent plant-based cuisine.
Reflecting on five decades of his career, René Mathieu looks toward the future with enthusiasm: “My desire to create, innovate, and pass on knowledge is stronger than ever. Each day is a new opportunity to learn, share, and continue evolving.”

Guests will also be able to stay on site in one of the five rooms or two top-of-the-range suites at the Airfield Hotel.
The Brasserie Côté Cour at Château de Bourglinster will continue to operate unchanged, under the management of René Mathieu and his team.
In addition, a new concept for La Distillerie at the Château will be revealed during 2025.
The year 2025 promises to be full of change for Réné Mathieu’s team.
