Ingredients

  • 150 g wild garlic leaves
  • 60 g walnuts
  • 60 g grated Parmesan cheese
  • Olive oil
  • Salt & pepper

Instructions

  1. Blend the wild garlic, walnuts, grated Parmesan, salt and pepper, gradually adding olive oil, until you obtain a grainy paste.
  2. Transfer to a jar and refrigerate. Use within seven days.

Notes

Before using the wild garlic, soak it for a few minutes in cold water with some white vinegar or baking soda.
