A 100 metres pizza in Esch!

This Saturday 17 June, on Rue de l’Alzette in Esch, Cloud Factory pizzeria will be making the biggest pizza in Luxembourg: 100 m long!

“Above all, it’s a way of saying thank you”, begins Francesco Micillo, one of the owners of the Cloud Factory pizzeria at 89 Rue de l’Alzette. “Thank you to the people of Luxembourg, who support us, and also to all our customers in Esch, many of whom have become regulars since the restaurant opened in October. Thanks to them, we’re doubling our volumes every month.”

350 kg of tomato sauce and 400 kg of mozzarella

This Saturday, Francesco and all his teams will be busy making a 100-metre pizza: “We’re a Neapolitan pizzeria and the idea came about because a similar challenge was carried out in the streets of Naples a few years ago,” explains the Italian.

We’ll be using exactly the same products as for the pizzas we make in the restaurant. The dough will be prepared the day before by 4 of our pizzaiolos, and as soon as it has risen, we’ll start pulling out 1m slices every 2-3 minutes”. To make this giant Margherita: 100 kg of dough, 350 kg of San Marzano tomato sauce, 400 kg of mozzarella fior di latte, and lots of fresh basil. 

To taste for free

“We are supported in this operation by the municipality of Esch-sur-Alzette, which will prepare the street and the tables on which the pizza will be placed, from 89 rue de l’Alzette to the town hall building.”

Once the “work” is finished, “around 12.30 pm”, it will be uncovered and around twenty volunteers will cut up slices to offer to the public. “It will be a sort of giant buffet. Our restaurant won’t be serving pizzas, but we will be offering drinks.”

36th place on the 50 Top Pizza

Cloud Factory, which also has an address in Neudorf, came 36th in May at the prestigious Top 50 Pizza ceremony held in Barcelona, Spain. Considered to be the Michelin guide for pizzerias, this prestigious ranking made Cloud Factory the first Luxembourgish restaurant to receive such an honour.
