Ingredients

  • 250 g fermenting flour (white or wholemeal)
  • 1/2 tsp. bicarbonate
  • 1 tsp. cinnamon
  • 4 apples
  • 70 g neutral oil
  • 80 g maple syrup
  • 2 eggs
  • 250 g Greek yoghurt
  • For the crumble :
  • 60 g oatmeal
  • 30 g nuts
  • 1 tsp. cinnamon
  • 2 tbsp maple syrup
  • 2 tbsp. neutral oil

Instructions

  1. Preheat oven to 200°C. Place paper baking trays in a muffin tin and butter them.
  2. Mix the flour, bicarbonate, cinnamon and a pinch of salt in a bowl.
  3. Peel the apples. Coarsely grate three apples and cut the fourth into small cubes.
  4. In a second bowl, whisk together the oil, maple syrup, eggs and Greek yoghurt until smooth. Pour this mixture over the flour and mix.
  5. Add grated and diced apples to the batter; mix.
  6. For the crumble: coarsely chop the walnuts and mix with the oats in a bowl. Add cinnamon, maple syrup and oil.
  7. Divide the muffin batter between the cassettes and top with the crumble. Gently press down.
  8. Bake in the oven for 25 to 30 minutes until the crumble is golden brown. To check if the muffins are cooked, stick a skewer into the centre of a muffin: it should come out dry.
  9. Leave to cool on a wire rack.
