Ingredients

  • 1 tbsp vegetable oil
  • 150 g mushrooms, sliced
  • 2 green onions, white and green parts chopped separately
  • 300 g baby spinach
  • 1 tbsp tamari
  • 1 tbsp sesame seeds
  • 2 tsp sesame oil
  • 1 tbsp rice wine vinegar
  • Cooked soba noodles, to serve

Instructions

  1. Heat oil in a large wok on high. Stir-fry mushrooms and white of onions 2 - 3 minutes, until tender.

  2. Add spinach, green of onions, tamari, seeds and oil. Stir fry 1 - 2 minutes until just wilted. Add vinegar and cooked noodles.

Notes

Accompany with a little extra tamari – a Japanese soy sauce, made without wheat.
