
Ingredients
- For the soup:
- 5 tomatoes
- 2 yellow peppers
- 1 cucumber
- 2 cloves of garlic
- 10 dried apricots
- 40 g almonds
- 1 lemon, freshly squeezed
- 1 tsp salt
- black pepper to taste
- For the topping:
- roasted nuts
- fresh herbs
Instructions
1. Wash the vegetables.
2. Add all ingredients to the blender and finely puree.
3. Garnish with fresh herbs or roasted nuts.
