    • 400 ml water
    • 2 slices fresh ginger
    • 1 cinnamon stick
    • 5 peppercorns
    • 5 cardamom capsules
    • 1 tsp cloves
    • 2 star anise
    • 2–3 tsp raw cane sugar
    • 200 ml milk or rice milk
    • 1 tbsp black tea or rooibos tea
    • Bring the water and spices to the boil, then reduce the heat and simmer for about 5 minutes.
    • Add the milk (or rice milk), black tea (or rooibos), and sugar. Simmer again for another 5 minutes.
    • Strain through a fine sieve and serve warm.
