Ingredients

  • 2 large sweet potatoes 
  • 2 tbsp olive oil 
  • 1 tsp smoked paprika 
  • 1 tsp garlic powder 
  • Salt and pepper, to taste
  • 120 g hummus
  • 30 g nuts (such as almonds or pistachio)
  • 1 tbsp hemp seeds 
  • fresh parsley

Instructions

  1. Preheat the oven to 200°C.
  2. Wash the sweet potatoes and slice them into wedges, about 1-2 cm thick.
  3. In a large mixing bowl, toss the sweet potato wedges with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  4. Arrange the wedges in a single layer on a baking sheet lined with parchment paper.
  5. Bake for 25-30 minutes or until the sweet potatoes are tender and lightly browned, flipping halfway through.
  6. To serve, arrange the sweet potato wedges on a plate and spread a dollop of hummus. Sprinkle the nuts, hemp seed, and parsley over the sweet potato wedges.
  7. Serve hot and enjoy!
