
Ingredients
- 500 g beetroot
- 250 g carrots
- 1 apple
- Seasoning :
- 250 g yoghurt
- ½ lemon juice
- 2 tbsp fresh parsley (chopped)
- 1 tbsp sunflower oil
- salt & pepper
Instructions
- Peel the beetroot, carrots and apple.
- Add the carrots, beetroot and apple and blend for 4 seconds at speed 5. Transfer to a bowl and chill until ready to serve.
- For the dressing, place the parsley in the bowl and chop for 5 sec/speed 5. Scrape down the sides of the bowl with a spatula.
- Add the yoghurt, oil, lemon juice, salt and pepper to the bowl and mix for 10 sec/speed 5.
- Pour the dressing over the grated vegetables and toss well. The salad is best after it has been in the fridge for a few hours.
