Roost’s culinary scene welcomes an exciting new addition with the opening of “Bistro Molkerei”. Located on the first floor of the same building as the Luxlait-Vitarium, this new brasserie brings a fresh dining experience to the LUXLAIT dairy plant premises. At the helm is Quentin Debailleux, the renowned owner and chef of Restauberge Péitry in Roodt-Syr, bringing his culinary expertise to this new venture.

A Strategic Expansion
The new location not only houses the bistro but also accommodates Debailleux’s catering business, allowing for more space and event hosting. Restauberge Péitry will continue to operate, with Debailleux dividing his time between both locations, supported by his wife and staff.
Bistro Molkerei boasts a light-filled interior with expansive windows, a charming terrace, and a separate room for special evening events that can accommodate up to 140 seated guests. Initially open Monday to Friday for lunch service only, there are plans to potentially extend hours to weekends in the future.



A Fresh Start with a Proven Chef
The decision to reopen the restaurant space, which had been closed for several years, was carefully considered by Luxlait CEO Gilles Gerard. He personally oversaw the improvements to address previous shortcomings. Gerard explains, “The old restaurant in this location was outdated, lacked parking, and had excessively long waiting times. We’ve addressed these issues by creating parking spaces, modernizing the decor, and most importantly, choosing a chef with the right approach to cuisine and service.”
In selecting Quentin Debailleux, Gerard aimed to ensure that Bistro Molkerei would offer both quality and efficiency – crucial for a lunch-focused establishment. Guests can expect the same high-quality cuisine that Debailleux is known for, with a lunch menu crafted for prompt service without compromising on taste.
With its strategic location within the Luxlait complex, ample parking, protected playground, and inviting atmosphere, Bistro Molkerei is poised to become a favourite spot for both locals and visitors to the Roost area, offering a perfect blend of culinary excellence and convenience.
