Ingredients

  • 500 g Dandelion
  • 150 g bacon, diced
  • 1 onion
  • 1 clove of garlic
  • 4 hardboiled eggs
  • 3 tbsp. oil
  • 4 tbsp. vinegar or lemon juice
  • Salt, pepper, mustard
  • Bread cubes
  • Some butter

Instructions

  1. Clean the dandelion leaves, wash and dry well. Fry the bacon in its own fat in a hot pan.
  2. Add the dandelion to a bowl and add the bacon (without the fat). Peel the onion and garlic and chop finely. Peel the eggs and cut into small cubes or quarters.
  3. Prepare a salad dressing with the onions, vinegar, oil and seasoning and drizzle over the dandelion leaves.
  4. Mix well and serve topped with the croutons previously fried in butter until crispy.
