- 400 ml water
- 2 slices fresh ginger
- 1 cinnamon stick
- 5 peppercorns
- 5 cardamom capsules
- 1 tsp cloves
- 2 star anise
- 2–3 tsp raw cane sugar
- 200 ml milk or rice milk
- 1 tbsp black tea or rooibos tea
- Bring the water and spices to the boil, then reduce the heat and simmer for about 5 minutes.
- Add the milk (or rice milk), black tea (or rooibos), and sugar. Simmer again for another 5 minutes.
- Strain through a fine sieve and serve warm.
