Ingredients

  • 250 g flour
  • 125 g butter (soft, at room temperature)
  • 20 g caster sugar
  • 1 pinch of salt
  • 1 egg
  • 1 tbsp water
  • a selection of dried herbs

Instructions

  1. Put the flour, butter and sugar in the bowl and mix for 10 sec/speed 6.
  2. Add the egg, water if necessary and mix in the dried herbs of your choice, then mix for 30 sec/speed 6. Transfer the dough to a floured work surface and roll into a ball. Wrap in cling film and refrigerate for at least 1 hour.
  3. Roll out the dough to a thickness of 5 mm on a floured work surface or between 2 sheets of baking paper. Put the dough in a pie tin or tart mould and prick the bottom with a fork to prevent air bubbles from forming.
  4. For biscuits, cut out discs of dough with a cookie cutter and place on a baking sheet lined with baking paper. Place in a preheated oven and bake at 180°C for 15-20 minutes for a pie or 10-12 minutes for biscuits, until golden brown.
  5. Cool completely on a wire rack before decorating, garnishing or storing in an airtight tin.
