Ingredients

  • 400 g watermelon, cubed
  • 200 g feta cheese, diced
  • 150 g blueberries
  • Some fresh parsley
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the cubed watermelon, diced feta cheese and blueberries.
  2. In a small bowl, whisk together the extra virgin olive oil and lemon juice. Season with salt and pepper to taste.
  3. Drizzle the dressing over the salad ingredients and gently toss to coat everything evenly.
  4. Taste the salad and adjust the seasoning or dressing ingredients if needed.
  5. Transfer the salad to a serving dish or individual plates.
  6. Garnish with parsley.
