Chef Patrice Noël took over at Le Place d’Armes a few days ago. He will be in charge of all the restaurants’ kitchens.
On Monday 24 July, Patrice Noël became Executive Chef of the historic Hôtel Le Place d’Armes. In this magnificent listed 18th-century townhouse, adorned with patios and terraces, the hotel offers a choice of restaurants: a gastronomic restaurant La Cristallerie, a refined brasserie Le Plëss and the Café de Paris.
Almost 120 seats
Patrice Noël ensures that every gourmet who passes through one of these restaurants has something to smile about. Altogether, almost 120 guests are catered for. He is even in charge of the hotel’s breakfasts and room service… A new challenge that this Frenchman, a former chef at the Melia and the Royal, takes on with confidence.
Spit cooking returns to the Plëss
The challenge for the summer is to re-establish the teams and prepare the menus for the new season. “I’d also like to see the return of spit cooking at Plëss, which started out as a real rotisserie. It is an excellent tool to make very tasty dishes, with poultry, beef, but also vegetables or whole pieces of fish… “
