Turmeric & dark chocolate muffins

Ingredients

  • 3 eggs
  • 200g flour
  • 150g dark chocolate
  • 1 dl milk
  • 60g butter or 5 tablespoons sunflower oil
  • 50g sugar
  • 1 tablespoon turmeric
  • 1/2 sachet baking powder
  • 1 pinch salt

Instructions

  1. Preheat oven to 200°C (fan-assisted).
  2. Cut chocolate into different-sized chips
  3. Beat eggs
  4. Add flour, milk and salt, add melted butter or sunflower oil, add sugar and turmeric, add baking powder, mix well until smooth
  5. Add chocolate chips and mix
  6. Fill muffin tins 3/4 full
  7. Bake for approx. 5 minutes at 200°C, then reduce to 170°C for a further 15-18 minutes

Notes: 

  • Using brown flour adds fiber to your recipe.
  • Replace butter with vegetable oil that is resistant to cooking, to reduce the saturated fatty acid content (interesting if you want to lower your risk of cardiovascular disease).
  • Turmeric and dark chocolate both have antioxidant properties.
