Greek Pepper Salad

    Colorful Greek salad with olives and feta cheese.

    • 2 peppers
    • 100 g cucumber
    • 40 g feta cheese or vegan feta alternative
    • 60 g Kalamata olives
    • 100 g cherry tomatoes
    • 2 stalks of fresh mint
    • 2 tbsp olive oil
    • 1 tbsp lemon juice
    • 1/2 tsp ground cumin
    • 1/2 tsp ground coriander
    • 1/2 tsp paprika
    • Salt
    • Pepper
    • Cut the bell peppers, cucumber and feta cheese into small cubes. Halve the olives and cherry tomatoes. Put all the ingredients into a bowl.
    • Finely chop the fresh mint and add to the bowl. Drizzle with olive oil and the lemon juice, and season with all the spices, salt and pepper.
