On Friday 16 June, KACHEN had the pleasure of being invited to a delightful culinary journey. Indeed, we had the chance to explore an extraordinary Saké Pairing by Tanaka 1789 x Chartier at Ma Langue Sourit.
François Chartier, often referred to as the „master blender“, was in Luxembourg to present his Tanaka 1789 x Chartier Sakes. This aroma specialist created a small revolution in the highly codified world of sake when he proposed the art of blending, as is often the case with fine wines, Champagne and whisky. Until now, the concept of blending had never been part of sake culture in Japan. But François Chartier has taken it upon himself to change that, by introducing top-of-the-range sake blends.

The meal began with a tantalising starter centred around Asparagus, enhanced with the delicate flavours of wild garlic and rapeseed. This culinary masterpiece was thoughtfully complemented by the Tanaka 1789 Ý— Chartier Blend 001 2018, a Saké that gracefully intertwined with the vibrant asparagus and herbaceous notes of the dish.
Continuing the culinary symphony, the succulent Lobster dish graced our palates, delicately combining the zest of lemon, the earthiness of artichoke, the subtle bite of spring onion, and the richness of a „barigoule“ beaten butter. A true feast for the senses, this extraordinary creation found its perfect companion in the Tanaka 1789 Ý— Chartier Pavillon 2019 Saké, as its refined profile danced alongside the artful flavours, elevating the dish to new heights.
As the meal progressed, a perfectly cooked Pigeon „sur coffre“ took centre stage, accompanied by the subtle elegance of white asparagus, the tartness of rhubarb, and the aromatic essence of shallot. To complete this impressive array of flavours, the Tanaka 1789 x Chartier Blend Niepoort Saké effortlessly embraced the complexities of the dish, creating a remarkable marriage of aromas that left our taste buds in awe.
Concluding this extraordinary gastronomic journey, a divine dessert of Redcurrant featuring the refreshing allure of spruce and the nutty undertones of almond brightened up our plates. The grand finale was brought to life by the Tanaka 1789 x Chartier Blend 002 2018 Saké, harmonising the vibrant redcurrants with the fragrant hints of spruce and the delicate sweetness of almonds.
Each dish in Ma Langue Sourit was a testament to the meticulous craftsmanship of the Tanaka 1789 Ý— Chartier collaboration. An unforgettable experience that transcended the boundaries of taste.
