Curious Buds’ Matcha Pistachio Cookie

Ingredients

  • 170g butter
  • 50g light brown sugar
  • 25g brown sugar
  • 100g granulated sugar
  • 8g matcha
  • 280 all purpose flour
  • 7g baking soda
  • 1g salt
  • 2 eggs
  • 225g white chocolate buttons 
  • Dried strawberry for decoration
  • Pistachio for decoration
  • Flaky salt for decoration

Instructions

  1. Whisk softened butter, sugars, matcha, and salt on low speed, gradually increasing to high speed.
  2. Mix flour and baking soda manually.
  3. Lightly whisk 1 whole egg and 1 yolk before adding to the mixture and pulsing.
  4. Add chocolate buttons.
  5. Incorporate dry ingredients. Mix until evenly combined.
  6. Chill for at least 30 minutes and up to 72 hours.
  7. Shape into 15 flat balls. Decorate with pistachios. Freeze or bake when desired.

Bake at 150°C until the edges are wrinkled and the center is slightly darker than the edges for a soft center. Garnish with dried strawberries or other fruits as soon as they come out of the oven. Finish with a pinch of salt.
