Ingredients
- 3 eggplants
- 50ml of olive oil
- 1 tbsp garlic powder
- 1 tbsp paprika
- 1 tsp salt
- 1 tsp pepper
- 200g plant-based yogurt
- 1 tsp harissa
Instructions
- Preheat the oven to 200°C.
- Halve the eggplants and score the flesh diagonally.
- In a small bowl, combine the olive oil, garlic, paprika, salt, and pepper.
- Brush the eggplants with the olive oil mixture.
- Place the eggplants skin side down on a baking tray.
- Bake for 40-45 minutes.
- Spread the yogurt on a serving plate and swirl in the harissa.
- Place the baked eggplants on top of the harissa yogurt and serve.
