The story of La Roma continues

Two months ago, the famous restaurant La Roma, located on rue de Louvigny in the center of town, said goodbye to Giuseppe Parrino, who had been at the helm for 24 years, and welcomed the new manager, Paul Mreches, who is determined not to change the recipe of this historic restaurant in the capital.

Keeping Roma’s history alive

When customers, all of whom have been loyal to the restaurant for decades, asked him if anything was going to change, Paul Mreches immediately reassured them.  “I didn’t take over Roma to change the concept, otherwise I would have opened another restaurant. I’ve been coming here since I was 8 years old, and for me, this place is a Luxembourg institution with a magnificent 75-year history that shouldn’t be changed!” he confides.

Paul Mreches therefore insists on his desire to highlight Roma by talking about this unique place that has known so many stories. “I want to put Roma back at the heart of its history, by talking about the authenticity and tradition that has been preserved over the years. For example, you need to know that our pasta has been handmade by Nella for over 40 years!”

As far as decoration is concerned, nothing will change, so as not to disrupt customers. “But I plan to reintroduce the restaurant’s old silverware, which still exists and is engraved with the name of the Italian family who owned the restaurant.”

In the kitchen, Paul Mreches will be making a few changes without altering the essence of the menu. “Everything is prepared in the kitchen by dedicated, ultra-professional staff, most of whom have been there for twenty years. I’m working alongside Chef José (who’s been the chef for 24 years), and the transition has gone very well with the whole team,” he enthuses.

The restaurant’s signature dishes, such as the assortment of pasta dishes most ordered by regulars, remain on the menu.

Fans of the truffle festival can rest assured that it will be held again this year. “I’ve just received 10 kilos of Alba truffles! It’s impossible to miss this tradition,” explains Paul.

The 3 other festivals organised throughout the year (pasta, risotto,) will also be maintained. “There may be slight modifications to the dishes on offer, like the risotto, which hasn’t changed in years, but the concepts remain.”
