Ingredients

  • 3 pommes de terre de taille moyenne
  • 1 jaune d'Å“uf
  • 10 g de beurre
  • 1 petit oignon
  • Quelques brins de ciboulette
  • Sel et poivre
  • 40 g de caviar Rova
  • 4 cuillères à  café de crème épaisse
  • Sel et poivre
  • Feuilles d'or comestible

Instructions

  1. Put the potatoes, onion, chives, salt, pepper and egg yolk in the bowl and blend for 12 seconds at speed 5.
  2. Melt the butter in a frying pan and add a large spoonful of the mixture. Flatten with a spatula and cook both sides until golden. Place on a paper towel and cut in half. 
  3. Place half a potato cake in a caviar tin or a small flat plate, place a nice caviar quenelle next to it and place a spoonful of thick cream on the potato pancake. Add the golden petals on the caviar.
