Ingredients

  • For the soup:
  • 5 tomatoes
  • 2 yellow peppers
  • 1 cucumber
  • 2 cloves of garlic
  • 10 dried apricots
  • 40 g almonds
  • 1 lemon, freshly squeezed
  • 1 tsp salt
  • black pepper to taste
  • For the topping:
  • roasted nuts
  • fresh herbs

Instructions

1. Wash the vegetables.

2. Add all ingredients to the blender and finely puree.

3. Garnish with fresh herbs or roasted nuts.
