- 2 avocados
- 1 mango
- 1 lime
- 20 scampis
- Fresh coriander
- Salt, pepper
Instructions
Blend the avocado flesh with half of the mango, the lime juice and a little salt in a blender. Dice the remaining mango. Fry the scampi in a pan with some oil. Arrange the avocado mango puree on plates, add the scampi and mango cubes and finish with salt and pepper and some fresh coriander.
