Bread & Butter Pudding

Ingredients

  • 2-3 tbsp unsalted butter, softened
  • 4-6 slices white bread
  • 75g mixed dried fruits
  • 25g caster sugar, plus extra for sprinkling
  • 2 medium eggs
  • 450ml semi-skimmed milk, warmed
  • Freshly grated nutmeg
  • Freshly made custard, to serve

Instructions

  1. Preheat the oven to 180°C, 10 minutes before cooking. Lightly butter a 1.1 litre overproof dish. Butter the bread and cut into quarter. Arrange half the bread in the dish and scatter over two-thirds of the dried fruit and sugar. Repeat the layering, finishing with the dried fruits.
  2. Beat the eggs and milk together and pour over the bread and butter. Leave to stand for 30 minutes.
  3. Sprinkle with the remaining sugar and a little nutmeg and carefully place in the oven. Cook for 40 minutes, or until the pudding has lightly set and the top is golden.
  4. Remove and sprinkle with a little extra sugar, if liked. Serve with freshly made custard.
