Ingredients

  • 420 g mushrooms
  • 75 g flour
  • 2 large eggs
  • 100 g dried breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp dried tarragon
  • 1 tsp dried parsley
  • Salt and pepper
  • Lemon juice
  • Oil for frying

Instructions

  1. Clean the mushrooms and preheat the deep fat fryer.
  2. Place the flour and breadcrumbs in two separate small bowls, and whisk the eggs together with garlic powder, tarragon, parsley, salt and pepper in a third bowl.
  3. Dip the mushrooms first in the flour, then in the eggs and finally in the breadcrumbs. If needed, dip into the eggs and breadcrumbs a second time to ensure that they are completely covered.
  4. Fry 5 mushrooms at a time for 3 minutes or until golden brown. Once cooked, transfer the mushrooms to a large plate lined with kitchen paper. Repeat with the remaining mushrooms.
