Ingredients

  • 300 g hazelnuts or almonds
  • 200 g sugar
  • 50 g water
  • 20 g butter (optional)
  • 2 g salt

Instructions

  1. Roast the nuts at 160°C for 10 minutes.
  2. Remove the peels using a kitchen towel (not necessary for almonds).
  3. Boil the sugar and water at 118°C, then add the nuts and stir with a spatula.
  4. Reduce the heat. The sugar will whiten and then caramelise.
  5. Add the butter and stir until melted.
  6. Pour onto baking paper and separate the nuts slightly.
  7. Leave to cool for at least 10 minutes.
