French toast with caramelised plums

Ingredients

  • 1 egg
  • 75 ml milk
  • ½ tsp vanilla extract
  • ½ tsp cinnamon
  • 4 slices brioche or bread
  • 6 plums
  • 4 tbsp maple syrup
  • 4 tbsp mascarpone

Instructions

  1. Whisk the eggs with milk, vanilla extract and cinnamon.
  2. Heat some butter in a pan.
  3. Dip the bread/brioche slices in the mixture and fry on both sides for 2 – 3 minutes until golden brown.
  4. Cut the plums into quarters and fry in a pan for about 5 minutes. Add the maple syrup and caramelise for 1 – 2 minutes.
  5. Serve the baked French toasts with the caramelised plums and 2 tablespoons mascarpone each.
