Ingredients

  • 250 g soft butter
  • 125 g white sugar
  • 125 g brown sugar
  • 4 eggs
  • 150 g flour
  • 2 tsp baking powder
  • 100 g ground almonds
  • 250 g blackberries
  • 50 g white chocolate
  • fresh blackberries 
  • 30 g chopped almonds

Instructions

  1. Preheat the oven to 190°C (170°C fan oven).
  2. Cut the soft butter into pieces. Place the butter and sugar in the bowl and blend for 2 mins on speed 4 until the mixture is white and creamy.
  3. Blend for 1 min 30 / speed 4 and add the eggs one by one through the opening in the lid.
  4. Sift in the flour and baking powder, add the flour, baking powder and ground almonds and blend for 1 min 30 / speed 4. Carefully add the blackberries and blend for 30 seconds on speed 2.
  5. Pour the batter into a lined cake tin (20 x 20 cm) and bake for 45-55 minutes. Leave to cool completely.
  6. Unmould the cake. Melt the white chocolate and pour over the cake. Decorate with fresh blackberries and, if necessary, roasted slivered almonds.
