Ingredients

  • 350 g flour
  • 25 g fresh yeast
  • 50 ml lukewarm milk
  • 75 g sugar
  • 1 tbsp vanilla sugar
  • 2 eggs
  • 1 pinch salt
  • 125 g soft butter
  • Zest of an organic lemon
  • Icing sugar for dusting

Instructions

  1. Put the flour in a bowl and make a well. In a separate bowl, dissolve the yeast in the milk and stir in the sugar and vanilla sugar. Pour the yeast mixture into the well and let it rest, covered, for 5 minutes. Spread the eggs, salt, butter and lemon zest around the edges of the flour. Knead everything together with the dough hook of the food processor for at least 5 minutes. Shape the dough into a ball, return to the bowl and leave to stand, covered, in a warm place for 30 minutes.
  2. After the resting time, knead the dough again and form small balls of approx. 5 – 6 g. Preheat the waffle iron. Bake the waffle balls one after the other in the iron. Leave to cool slightly on a cake rack, dust with icing sugar and pack into pretty bags to enjoy later at a picnic. Everybody, not only the kids, will love these.

Notes

The waffles can also be served with fruit such as blueberries, strawberries or raspberries.
