Pierre Hermé’s viennoiseries in Luxembourg

Autumn is here, bringing with it the season of cosy brunches at home! A crisp bit of news for your breakfasts: Pierre Hermé’s viennoiseries have just arrived at the Luxembourg City boutique. Of course, we gave them a try.

Plain croissant – or not

Pierre Hermé is best known for his famous macarons, sold in France, Luxembourg and across the globe. But let’s not forget that he is also a pâtissier who creates many other delights.

Good news: his range of viennoiseries is now available at the Hamilius boutique in Luxembourg City.

Alongside the classic croissant and pain au chocolat, with their perfectly executed buttery layers, one can also be tempted by the Ispahan croissant – the Maison’s signature pastry. It combines rose-flavoured almond paste with a lychee and raspberry compote for a delicately tangy finish. We tried it and can safely say it is divinely crisp and indulgent.

The range also features a pistachio pain au chocolat, with deliciously flaky pastry filled with pistachio almond paste and dark chocolate, topped with crushed pistachios.

A rise that begins in Paris

The viennoiseries are not fully prepared on site. The laminated dough for the croissants and pains au chocolat is made in Paris, where it begins its slow rise. The process is then halted, and the pastries are placed at low temperature (pre-proof frozen) before being transported to Luxembourg. Once there, the dough is defrosted and the rise resumes. Finally, the viennoiseries are baked in the boutique.

At €3.50 for a croissant and €4.50 for an Ispahan croissant, it’s not something for every morning – but a Pierre Hermé breakfast now and then is certainly a fine idea.
