Cut the bell peppers, cucumber and feta cheese into small cubes. Halve the olives and cherry tomatoes. Put all the ingredients into a bowl.
Finely chop the fresh mint and add to the bowl. Drizzle with olive oil and the lemon juice, and season with all the spices, salt and pepper.
