Baked Eggplants with Harissa Yogurt

Ingredients

  • 3 eggplants
  • 50ml of olive oil
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 200g plant-based yogurt
  • 1 tsp harissa

Instructions

  1. Preheat the oven to 200°C.
  2. Halve the eggplants and score the flesh diagonally.
  3. In a small bowl, combine the olive oil, garlic, paprika, salt, and pepper.
  4. Brush the eggplants with the olive oil mixture.
  5. Place the eggplants skin side down on a baking tray.
  6. Bake for 40-45 minutes.
  7. Spread the yogurt on a serving plate and swirl in the harissa.
  8. Place the baked eggplants on top of the harissa yogurt and serve.
