A Star Is Born: Archibald De Prince Opens Its Doors

In the historic setting of Au Vieux moulin, close to Echternach, Luxembourg’s gastronomic scene has just welcomed an exceptional new addition. Archibald and Rachel De Prince have transformed this charming old mill into a temple of refined cuisine, where minimalist design meets culinary artistry.

Chef De Prince, an Arlon native and winner of the Bocuse d’or Belgium 2024, delivered an absolutely enchanting dining experience that left us in awe. Each course was a delightful surprise, demonstrating why he’s earned his impressive credentials. Formerly René Mathieu’s second-in-command, he has emerged from his mentor’s shadow with remarkable confidence. While traces of Mathieu’s influence are detectible, de Prince’s distinctive style shines through in dishes like the exquisite Mathonet trout and the ingeniously prepared Agria potato with Royal Belgian caviar. We were particularly smitten with the barbecue-grilled confited pork belly and European lobster, which showcase his masterful technique and creativity.

The restaurant offers two carefully curated menus at €145: a seasonal local menu and a vegetarian version “La carte blanche végétale”, both served in the meticulously renovated space where every detail, from the custom-crafted kitchen to the impeccable service led by their accomplished hostess, speaks of unwavering dedication to excellence.

With six boutique hotel rooms completing this gourmet retreat, Archibald De Prince isn’t just opening a restaurant — it’s creating a culinary destination. A star is born, indeed, and we look forward to seeing this bright new addition shine in Luxembourg’s gastronomic constellation. Our very best wishes to this promising new venture.
