Ingredients

  • 500 ml milk
  • 6 egg yolks (room temperature)
  • 3 tbsp sugar
  • 1 packet vanilla sugar
  • Raspberries or redcurrants (for decoration)

Instructions

  1. Bring the milk to the boil in a saucepan, remove from the heat and set aside.
  2. Mix the egg yolks with the sugar and vanilla sugar, then blend with a hand mixer for 5 minutes until frothy.
  3. Gradually add the milk, a little at a time, stirring constantly.
  4. Pour the mixture back into the saucepan and cook over a medium heat until just before boiling, stirring constantly (with a wooden spoon). Remove from the heat before it starts to bubble.
  5. Allow to cool and serve in small pots topped with the raspberries or redcurrants.
