Baked eggs cupcake style with Tête de Moine PDO rosettes

Ingredients

  • 4 eggs
  • 1 shallot, chopped
  • 1 tbsp chives, chopped
  • 4 slices of breakfast bacon
  • salt and pepper
  • Topping :
  • rosettes of Tête de Moine PDO

Instructions

  1. Preheat oven to 180°C. In a bowl, beat the eggs with the shallot and chives. Season with salt and pepper.
  2. Line the inside of a cupcake tin with thin slices of bacon. Pour in the egg mixture until halfway up. Bake for about 20 minutes.
  3. Unmould the eggs. Garnish with rosettes of Tête de Moine PDO. Serve warm.
