Banh Mi Sandwich from Ready?!

Ingredients

  • White crunchy baguette
  • Mayonnaise (they use their homemade vegan mayonnaise, tangy and  allrounder)
  • Protein of choice such as white tofu or chicken
  • Vegetables like grated carrots and cucumber
  • Fresh or canned jalapeños
  • White wine vinegar
  • Salt
  • White sugar
  • Lime juice
  • Soy sauce
  • Pepper
  • Cilantro
  • Mint leaves
  • Sriracha sauce

Instructions

  1. Pickle the vegetable and jalapeños overnight by mixing them with the white wine vinegar, salt and sugar.
  2. Cut the baguette into two and spread the mayonnaise on the bottom side.
  3. Season your protein with lime juice, soy sauce and pepper. Then add the protein to your sandwich.
  4. Stuff with the pickled vegetables.
  5. Add a bunch of cilantro and mint leaves for the extra freshness.
