Ham, Marinated Veggies & Goat’s Cheese Sandwiches
- 1 small courgette
- 1 medium pepper
- 4 tbsp olive oil
- Juice of ½ lemon
- 1 large baguette
- 120 g fresh goat’s cheese
- 150 g ham (Parma or similar)
- Salt
Preheat the oven to 180°C (160°C fan). For the marinated vegetables: slice the courgette with a mandolin, cut the pepper into small pieces and place both on a lined baking tray. Bake for 10-15 minutes (remove the courgette earlier if it starts to burn).
- Once cooked, place the vegetables in a mixture of olive oil, salt and lemon juice for a couple of hours (or overnight). Cut the baguette in half, spread with goat’s cheese, then top with ham and marinated vegetables.
