Onion soup with gratinated sage and Grana Padano cheese

Ingredients

  • White onions 900 g
  • Sage 10 g
  • Chicken stock 1,2l
  • Parsley 20 g
  • Grana Padano cheese 120 g
  • Garlic 2 cloves
  • Extra virgin olive oil 1 drizzle
  • Bread slices 4 pcs
  • Salt
  • Pepper
  • Sugar
  • Balsamic vinegar 65 ml

Instructions

  1. For the onion soup, peel and finely chop the white onions.
  2. Sauté the white onions in a little olive oil until they are brown and add the chopped garlic and sage leaves.
  3. Season with salt, pepper and a pinch of sugar and deglaze with balsamic vinegar.
  4. Add chicken stock and simmer for 1 ½ hours.
  5. At the end of the cooking time, pour the onion broth into a lion's bowl or similar, place the slices of bread previously toasted on the soup and bake with the Grana Padano cheese in the oven in the grill mode for 10-12 minutes.
