Sandwiches with Emmentaler PDO and grilled vegetables

Ingredients

  • 4 faluches or round plain or cereal bread rolls
  • 1 eggplant, thinly sliced
  • 1 zucchini, thinly sliced
  • 1/2 sweet pepper each: red and yellow, deseeded, cut into 5 cm strips
  • 50 g green asparagus, hard part removed
  • 2 + 1 tbsp olive oil
  • 1 tbsp dried thyme
  • 1 tbsp dried garlic
  • salt, pepper
  • 4 slices Emmentaler AOP
  • Garnish:
  • sprigs of flat parsley, arugula, basil
  • 2 spring onions, cut into rings on the bias

Instructions

  1. Preheat a grill. In a bowl, mix the eggplant, zucchini, peppers and asparagus with the 2 tablespoons of olive oil, thyme and garlic. Season with salt and pepper. Mix by hand to coat all the vegetables.
  2. Spread the vegetables on the grill. Grill for 3 to 6 minutes on each side.
  3. Open the buns. Brush the inside with the remaining olive oil. Spread the vegetables on the bottom. Place a slice of Emmentaler AOP. Garnish with flat parsley, arugula, basil and spring onions.
