Ingredients

  • 250 g small mozzarella balls 
  • 2 tablespoons flour
  • 2 eggs
  • 70 g breadcrumbs
  • Herbs de Provence
  • ½ tsp salt
  • 500 ml sunflower oil for frying

Instructions

1.  Pat the mozzarella balls well dry.

2. Put the flour, eggs and breadcrumbs separately in a deep plate. Whisk the eggs with a fork, season with salt and herbs de Provence. Roll the mozzarella balls first in the flour, then through the egg and finally roll in the breadcrumbs. Draw through the egg again and roll in the breadcrumbs.

3. Heat the oil in a small saucepan to approx. 160-170°C. Hold a wooden spoon handle in the oil. If small bubbles form on the handle of the spoon, the oil is hot enough. Fry the Mozzarella balls one by one in the oil for 3-4 minutes until golden brown. Remove with a slotted spoon and drain on kitchen paper.
