Ingredients
- White crunchy baguette
- Mayonnaise (they use their homemade vegan mayonnaise, tangy and allrounder)
- Protein of choice such as white tofu or chicken
- Vegetables like grated carrots and cucumber
- Fresh or canned jalapeños
- White wine vinegar
- Salt
- White sugar
- Lime juice
- Soy sauce
- Pepper
- Cilantro
- Mint leaves
- Sriracha sauce
Instructions
- Pickle the vegetable and jalapeños overnight by mixing them with the white wine vinegar, salt and sugar.
- Cut the baguette into two and spread the mayonnaise on the bottom side.
- Season your protein with lime juice, soy sauce and pepper. Then add the protein to your sandwich.
- Stuff with the pickled vegetables.
- Add a bunch of cilantro and mint leaves for the extra freshness.
