In the historic setting of Au Vieux moulin, close to Echternach, Luxembourg’s gastronomic scene has just welcomed an exceptional new addition. Archibald and Rachel De Prince have transformed this charming old mill into a temple of refined cuisine, where minimalist design meets culinary artistry.<\/strong><\/p>\n\n\n\n

Chef De Prince, an Arlon native and winner of the Bocuse d’or Belgium 2024, delivered an absolutely enchanting dining experience that left us in awe. Each course was a delightful surprise, demonstrating why he’s earned his impressive credentials. Formerly Ren\u00e9 Mathieu’s second-in-command, he has emerged from his mentor’s shadow with remarkable confidence. While traces of Mathieu’s influence are detectible, de Prince’s distinctive style shines through in dishes like the exquisite Mathonet trout and the ingeniously prepared Agria potato with Royal Belgian caviar. We were particularly smitten with the barbecue-grilled confited pork belly and European lobster, which showcase his masterful technique and creativity.<\/p>\n\n\n\n
