class=\"penci-recipe-title\">Instructions<\/h3>\r\n\t\t\t\t\t<ol>\n<li>Preheat the oven to 180\u00b0C.<\/li>\n<li>Cut the pumpkin into thick slices, removing the seeds but keeping the skin. Arrange the slices on a baking tray lined with baking paper.<\/li>\n<li>Add the garlic cloves with the skins. Drizzle with olive oil and sprinkle with thyme and rosemary sprigs. Season with salt and pepper.<\/li>\n<li>Roast in the oven for around 40 minutes, monitoring cooking until the pumpkin is tender and lightly browned.<\/li>\n<li>Meanwhile, roast the sunflower seeds in a small frying pan over a high heat for about 5 minutes. Set aside once golden and crisp.<\/li>\n<li>Bring a pan of salted water to the boil and cook the Linguine Le Moulin 1704 pasta according to the instructions on the packet. Drain and keep warm.<\/li>\n<li>Cut the monkfish fillet into medallions. Season with salt and pepper.<\/li>\n<li>Heat a drizzle of olive oil in a frying pan and brown the monkfish medallions over a high heat for around 3 to 4 minutes on each side.<\/li>\n<li>Wrap the medallions in aluminium foil and keep warm.<\/li>\n<li>Remove the slices of roasted pumpkin and a few cloves of skinless garlic. Place in a saucepan.<\/li>\n<li>Add the Luxlait cr\u00e8me fra\u00eeche to the pan and blend until smooth. If the texture is too thick, add a little water to reach the desired consistency. Adjust the seasoning if necessary.<\/li>\n<li>Stir the linguine into the pan and generously coat with the pumpkin cream.<\/li>\n<li>Arrange the linguine pasta in deep plates.<\/li>\n<li>Arrange the monkfish medallions on the pasta and sprinkle with roasted sunflower seeds.
